Fall is almost here and that means casserole and Instapot meals are right around the corner. Check out this delicious low-carb casserole dish!
Low Carb Chicken Broccoli & Cauliflower Casserole
- 2 lbs of tenderized or thinly cut chicken
- 1 Frozen Bag Broccoli
- 1 Frozen Bag Cauliflower
- Extra- Virgin Olive Oil
- Sea Salt
- Cracked Pepper
- 2 Large Egg
- 4 Cups Part-Skim Mozzarella
Pre-heat over to 450 F
Dress chicken in extra-virgin olive oil and season and place in a large baking dish.
Bake for 20 minutes.
While chicken is baking steam frozen broccoli & cauliflower.
Pull Chicken out and set aside.
In a large bowl, add steamed cauliflower, broccoli, chicken, eggs, mozzarella cheese, salt, garlic powder, and onion powder. Mix together until evenly combined.
Transfer casserole into the chicken deep baking dish and evenly distribute.
Add a little more cheese and seasoning if desired.
Let bake for 30-50 more minutes.
Once done, remove from oven and let cool for 10 minutes.
