This simple salmon recipe that goes great with a light romaine salad or mixes well with a rice and veggie bowl.

Ingredients
- 4 Filets Salmon
- Extra virgin-olive oil
- Coconut Spray
- 2-3 Lemons
- 1-3 tbsp Minced Garlic
- Sea Salt
- Cracked pepper
- Parsley for garnish (optional)
- Stevia (optional)
Instructions

Pre-heat oven to 425 F.

In a bowl mix extra-virgin olive, squeezed lemon juice, sea salt, minced garlic, cracked pepper and stevia (if you like it sweet).

Coat salmon with the marinade.

Spray coconut oil cooking spray on baking sheet.

Place salmon on baking sheet.

Bake for 12-18 minutes - depends on salmon side and thickness. Internal temperature comes to 145 F.
