Sweet Lemon Garlic Pepper Chicken – sure is a mouth full to say but it tastes delicious and makes for a super easy dinner. Both the dressing and marinade in the exact same so it is a total time saver!
Sweet Lemon Garlic Pepper Chicken & Salad Dinner
Quick and easy dinner for the family!
Ingredients
- 4-6 Tenderized Chicken Breasts
- 2-3 Stalks Romaine
- Extra-Virgin Olive Oil
- Garlic Pepper
- 2-3 Lemons
- Truvia
- Frozen Riced Cauliflower
- Parsley (optional)
Instructions

In a bowl mix extra-virgin olive, garlic pepper, stevia and squeezed lemon juice. This will be used as the dressing and the marinade.

Set aside dressing for the salad and the use the rest to coat chicken in a bowl.

If you can for great taste cover chicken and let it marinade for 15-45 minutes in fridge.

In a large pan, skillet or grill pan, coat with coconut oil cooking spray.

Place chicken on the large pan, skillet or grill pan. Cook on medium to high heat. Let cook for a few minutes on each side. Chicken is cook fully cooked when the internal temperature is 165 F.

When the chicken is cooking on the stove, I chop the romaine, onions and prep the salad.

While the chicken is cooking I have my cauliflower rice. Confession, I only go with a good quality frozen riced cauliflower and follow the directions. Usually the ones I purchase, call for it being heated on the stove.

Once chicken and riced cauliflower is finished cooking you can begin plating and paring with your salad. I usually have a little dressing left over from the salad and add it to the cooked chicken for a little extra flavor.

Add Parsley for garnish (totally optional) .
