I love arugula and pistachios. So one night I decided to mix the two and the salad came out so good. Here is a quick and easy recipe that makes for a great Fall side dish.
Pistachio and Arugula Salad
Servings 4 People
- 1/2 Cup Wonderful Honey Roasted Pistachios
- 1 Sweet Onion
- 2-4 Cups Arugula
- 3 TBSP Diced Goat Cheese
- 3-4 TBSP Extra-Virgin Olive Oil
- 2 TBSP Honey
In a small bowl mix extra-virgin olive and honey.
Chop sweet onion.
In a large mixing bowl, throw in the arugula, chopped onion, diced goat cheese, and pistachios.
Mix in the honey & extra virgin olive oil.
