Beef and Kale Cauliflower Rice Bowl

Beef and Kale Cauliflower Rice Bowl

Servings 4

Ingredients

  • 1-1.5 LBS Ground Beef
  • 24- Cups Kale
  • 1 Packet Riced Cauliflower
  • 1-2 TBSP Extra-Virgin Olive Oil
  • 1 Lemon
  • Sea Salt
  • Cracked Pepper

Instructions

  1. Lightly coat a large stir-fry pan with extra-virgin olive oil.

  2. Place frozen riced cauliflower in the pan. The pan should be on medium-to-high heat.

  3. Break up the cauliflower evenly and move it around.

  4. Cover with a lid for a few minutes.

  5. When the cauliflower has completely thawed. Add in ground beef and break up.

  6. Continue to break up the ground beef till it is nice and minced.

  7. When the ground beef is almost entirely brown, add more extra-virgin olive and kale in.

  8. Stir the riced cauliflower, ground beef, and kale adding in sea salt, cracked pepper, and lemon juice. I like to cover with a lid for a minute or two and let seasoning set.

  9. Remove and plate.
