Sweet and Sautéed Beet Greens

Whatever you do, do NOT throw out your beet greens. The stems and leaves sauteed are almost as good if not better than the beet itself. Try this sweet saute. It is loaded with nutrients.

 

Sweet and Sautéed Beet Greens

Ingredients

  • 1-3 Bunches Beet Stems and Leaves
  • 1 Large Sweet Onion
  • 1-3 Garlic Cloves
  • Extra-Virgin Olive Oil
  • Bonton Farm's Honey
  • Sea Salt & Cracked Pepper

Instructions

  1. Chop onion.

  2. Spray pan with avocado cooking spray. Turn the stove onto medium-high heat.

  3. Add onion to the pan, and saute.

  4. Clean and chop beet stems and leaves.

  5. Once the onions begin to soften, add in the beet steam and leaves. Add in a little extra-virgin olive oil.

  6. Sautee for a minute or two. Reduce the heat and cover with a lid.

  7. Mince the garlic cloves and add to the pan.

  8. Turn up the heat for a bit and saute, adding in a little more extra-virgin olive oil.

  9. Remove and plate. Drizzle on a little Bonton Farm's honey & season to liking.
