I love, love asparagus so much. Here is a quick but a little bit out-of-the-box recipe. Goes great with almost any protein.
Roasted Asparagus and Tomatoes
Ingredients
- 1-2 Bushells Asparagus
- 2-3 Large Tomatoes
- Extra Virgin Olive Oil
- Avocado Cooking Spray
- Trader Joe's Chile Lime Seasoning
Instructions

Preheat oven to 425.

Chop ends of asparagus off.

Chop tomatoes into 4s.

Coat the asparagus & tomatoes with extra-virgin olive oil & the chile lime seasoning.

Line a baking sheet and spray with avocado cooking spray.

Place asparagus in the oven for 12-15 minutes.

Remove then add tomatoes. Bake for another 5-8 minutes.

Oven times may vary.

Remove from oven. Let cool. Can add some nutritional yeast if you like. Gives it a cheesy taste.
