Easy Fresh Picked Strawberry Recipes

I used to try to attempt to make everything from scratch and all that led me to was defeat and an endless cycle of starting over again. Not to mention it sucked the fun out of every meal I would try to make.

When I started gardening 3 years ago I tried to do everything from seed. While I still grow lettuces and herbs from seed, I love heading to the farmers market or local nursery for starters. Below are our 3 easy Strawberry-themed recipes that pack a powerful nutrition punch and are super easy. The strawberries featured are the ones I hand-picked from a local family farm. I grew the lettuce on my apartment balcony, and the strawberry ice cream was from a family-owned creamery that makes fresh ice cream. They paired up with the family farm to add their farm fresh strawberries. As for the rest of the ingredients, I picked them up at my local grocery store.

Strawberry Mesclun Salad

Ingredients

  • Basket Full Mesclun Lettuce
  • 1 Large Container Local Farmed Picked Strawberries
  • Crumbled Goat cheese
  • 1/4 Chopped Onion
  • 2 TBSP Red Wine Vinaigrette
  • 2 Heaping TBSP Dijon Mustard
  • 2-4 TBSP Honey
  • 2-4 TBSP Extra-Virgin Olive
  • Cracked Pepper
  • Sea Salt

Instructions

  1. Harvest balcony lettuce.

  2. Clean lettuce in distilled vinegar water.

  3. Let strawberries soak in distilled vinegar water for a 15-minute bath.

  4. Add red wine vinegarette, dijon mustard, honey, extra-virgin olive oil, sea salt, and cracked pepper into the salad dressing mixer, and mix well. I usually play around with these measurements.

  5. Chop 1/4 onion.

  6. Rinse and pat dry the lettuce and strawberries.

  7. Mix all dry ingredients in a bowl.

  8. Add in the goat cheese.

  9. Mix in the dressing.

Strawberries and Chocolate Hummus

Ingredients

  • 1 Large Basket Strawberries
  • 1 Container Chocolate Hummus

Instructions

  1. If possible pick strawberries at a local farm or pick up at a Farmers Market.

  2. Grab your favorite chocolate hummus at a local grocery store.

  3. Give your strawberries a good soak in distilled vinegar.

  4. Rinse strawberries with water and pat dry.

  5. Plate strawberries and fill the serving bowl with chocolate hummus.

  6. Enjoy!

Super Easy Fresh Strawberry Short Cake 

Ingredients

  • Large Container Fresh Strawberries
  • Container Locally Sourced Strawberry Ice Cream
  • 1-2 Packs 60 Calorie Vanilla Shells purchased at any grocery store

Instructions

  1. Clean strawberries thoroughly before use.

  2. Scoop strawberry ice cream into the vanilla shell.

  3. Top the ice cream and the vanilla shell with sliced strawberries.
