Basil Chicken & Veggie Cauliflower Pizza
Ingredients
- 2 Red Bell Peppers
- 1 tbsp Minced Garlic
- 1/4 Purple Onion
- 1 Carton of Cherry Tomatoes
- 1 wedge Goat cheese
- 1 lb Ground Chicken
- 5-10 Basil Leaves
- 1-2 cups Low-sodium Marinara Sauce
- Sea Salt and Cracked Pepper
- Coconut Oil Cooking Spray

Preheat oven to 425 - 450 F

Finely chop onion & red bell peppers. Chop cherry tomatoes into halves. Finely chop 1-3 basil leaves (I like to use kitchen scissors over a knife to do this). Keep all these separate for each will be added in at different times.

In a large stove top pan coat with coconut oil cooking spray. Add in ground chicken and finely break up into little pieces.

Once it is cooked through (no pink) set ground chicken aside.

At some point the oven will be ready. Trader Joe's crusts have you bake it for 10-15 minutes on each side. Based on what cauliflower crust you have, follow the label's instructions.

Saute the finely chopped red bell peppers and onion. After a few minutes add in the chopped tomatoes and minced garlic. Once veggies are at desired texture, add in sauce with finely chopped basil along with the cooked ground chicken.

Let simmer on low while the crust bakes.

After the cauliflower has been baked on each side according to the directions, remove and place sauced chicken on top.

Pop backed into the oven for a 3-5 minutes.

Slice up goat cheese and basil leaves.

Remove pizza and add the sliced goat cheese and basil leaves.

Place back into oven for 1-2 minutes and then remove.
