Cilantro & Spinach Riced Cauliflower Bowl

This is a nutrient powerhouse of a bowl! Pair it with your favorite grilled piece of meat and fish or eat it alone. I Grew Cilantro the microgreens myself & everything just tastes better. If you are interested in growing microgreens, check out Growing Your Own Microgreens.

Cilantro & Spinach Riced Cauliflower Bowl


  • 1 Pack of Riced Cauliflower
  • Avocado Cooking Spray
  • 1/2 Large Onion
  • 1 Large Handful Cilantro Microgreens
  • 1-2 Cups Spinach
  • Sea salt
  • Cracked Pepper
  • Trader Joe's Spicy Cashew Butter Dressing Optional
  • Extra-Virgin Olive Oil Optional


  1. Coat pan well with Avocado Cooking Spray.

  2. Place frozen riced cauliflower on pan & cover with lid.

  3. Finely chop both onion and garlic.

  4. Once cauliflower is no longer frozen and beginning to warm, add in the onion along with a little more avocado cooking spray.

  5. Sautee for 2-3 minutes and season with sea salt and cracked pepper.

  6. Once cauliflower rice starts taking on the texture you like, add in spinach and minced garlic.

  7. Sauté for a few more minutes.

  8. Remove the riced cauliflower, onion, spinach, and garlic from the pan and place in a large bowl.

  9. Pour in either Trader Joe's Spicy Cashew Butter Dressing or extra-virgin olive & season of choice.

  10. Mix well, serve and enjoy!
