Here is a quick and easy dinner the whole family can and enjoy and is relatively low carb!
Creamy Whole 30 Esque Chicken and Broccoli Dinner
Ingredients
- 4-6 Tenderized or Thin Cut Chicken Breasts
- 1 Can Full Fat Coconut Milk
- Garlic Pepper
- 1 Sweet Onion
- 2-3 Heads of Broccoli
- Extra-Virgin Olive Oil
- 1 Tbsp Tapioca Flour
- Organic Cane Sugar or Stevia
Instructions

Mix extra-virgin olive oil, garlic pepper, and organic cane sugar or stevia in a bowl.

Coat tenderized/thin cut chicken breasts.

Spray pan with coconut cooking spray.

Place chicken on pan and cook on medium-high heat for about 3-4 minutes on each side.

While chicken is cooking, clean broccoli.

Chop onions and broccoli.

Remove chicken from pan and set aside on a plate. Please note, the temperature of the chicken should be around 165 F for clean cooking.

In the pan, add onions and broccoli with some additional extra-virgin olive oil and seasoning. Saute for a few minutes.

Add coconut milk, tapioca flour, and stir.

Add back in the chicken and let simmer for a few minutes.

Enjoy - pair with a salad or riced cauliflower.

For looks you can garnish with parsley.
