Creamy Whole 30 Esque Chicken and Broccoli Dinner

Here is a quick and easy dinner the whole family can and enjoy and is relatively low carb!

Creamy Whole 30 Esque Chicken and Broccoli Dinner

  • 4-6 Tenderized or Thin Cut Chicken Breasts
  • 1 Can Full Fat Coconut Milk
  • Garlic Pepper
  • 1 Sweet Onion
  • 2-3 Heads of Broccoli
  • Extra-Virgin Olive Oil
  • 1 Tbsp Tapioca Flour
  • Organic Cane Sugar or Stevia


  1. Mix extra-virgin olive oil, garlic pepper, and organic cane sugar or stevia in a bowl.

  2. Coat tenderized/thin cut chicken breasts.

  3. Spray pan with coconut cooking spray.

  4. Place chicken on pan and cook on medium-high heat for about 3-4 minutes on each side.

  5. While chicken is cooking, clean broccoli.

  6. Chop onions and broccoli.

  7. Remove chicken from pan and set aside on a plate. Please note, the temperature of the chicken should be around 165 F for clean cooking.

  8. In the pan, add onions and broccoli with some additional extra-virgin olive oil and seasoning. Saute for a few minutes.

  9. Add coconut milk, tapioca flour, and stir.

  10. Add back in the chicken and let simmer for a few minutes.

  11. Enjoy - pair with a salad or riced cauliflower.

  12. For looks you can garnish with parsley.
