I love growing my greens, Costco, and a low-cost yet delicious rotisserie chicken. This easy dinner takes less than 20 minutes and combines the best of your garden and market world!
Garden Fresh Rotisserie Chicken
Ingredients
- 1 Rotisserie Chicken
- 2-4 Cups Homegrown Spinach
- 1 Huge Handful Salad Mix Microgreens
- 1 Huge Handful Beet Mix Microgreens
- Avocado Cooking Spray
- Sea Salt and Cracked Pepper
- Bolthouse Farms Creamy Ceasar Yogurt Dressing Optional
- White Vinegar
Instructions

Harvest spinach and microgreens.

Give spinach and microgreens a good cleaning with white vinegar.

Microwave large frozen riced cauliflower for about 3-4 minutes, to prepare for the saute.

While the cauliflower is warming, pull apart your store-bought Rotisserie. I usually pick up a rotisserie chicken on the way home and try to keep it warm for dinner.

Spray pan with avocado cooking spray.

Sauté riced cauliflower, season with sea salt & cracked pepper.

Add in cleaned spinach.

Pair sautéed riced cauliflower and spinach with chicken. Sprinkle on the amount of microgreens desired.
