Honey Pistachio Arugula Salad

I love arugula and pistachios. So one night I decided to mix the two and the salad came out so good. Here is a quick and easy recipe that makes for a great Fall side dish.

Pistachio and Arugula Salad

Servings 4 People


  • 1/2 Cup Wonderful Honey Roasted Pistachios
  • 1 Sweet Onion
  • 2-4 Cups Arugula
  • 3 TBSP Diced Goat Cheese
  • 3-4 TBSP Extra-Virgin Olive Oil
  • 2 TBSP Honey


  1. In a small bowl mix extra-virgin olive and honey.

  2. Chop sweet onion.

  3. In a large mixing bowl, throw in the arugula, chopped onion, diced goat cheese, and pistachios.

  4. Mix in the honey & extra virgin olive oil.

  5. Enjoy!
