Ladies’ Night Shrimp and Chardonnay Meal

Don’t let your current nutrition plan stop you from enjoying a ladies’ night from time to time! This is a great girl’s night meal, especially if you and your gal pals are working on some health goals. Combine this recipe with roasted veggies or sauteed spinach. A fun way to build upon your healthy meal is to encourage your gal pals to bring veggie-based side dishes.

Delicious Shrimp & Chardonnay Deluxe

Ingredients

  • 1 Large Pack of Frozen Shrimp or ready-to-go cooked shrimp.
  • 2-3 Packed Frozen or Fridge Pre-Chopped Riced Cauliflower
  • 1-3 Garlic Cloves (optional)
  • VINTNER'S KITCHEN Chardonnay Wine Rub
  • Maniatis Extra-Virgin Olive Oil
  • 1 Large Onion
  • 2-3 Large Handfuls Microgreens
  • Trader Joe's Avocado Spray

Instructions

  1. If shrimp is frozen, place it in a large bowl and run cold water over it until the shrimp is defrosted.

  2. Mince garlic cloves (optional).

  3. Finely chop the red onion.

  4. Coat a large cooking pan with avocado oil spray.

  5. Place red onion and riced cauliflower in the large pan.

  6. If you are using frozen, place the riced cauliflower in first and cover with a lid. Keep checking it and breaking it up. Then add in the onion.

  7. Once the onion and cauliflower are starting to form the texture you like, add in fully defrosted and cooked shrimp.

  8. If the shrimp isn't fully cooked you will want to cook it until the shrimp is fully cooked through.

  9. Stir all the ingredients together. Add in the extra-virgin olive oil, garlic, and VINTNER'S KITCHEN Chardonnay Wine Rub

  10. Reduce to a simmer and let all the seasoning and ingredients marinate for a few minutes.

  11. Plate, top with microgreens & herbs. Pair with veggies and chardonnay.
