I love this quick, easy, and filling Buffalo Salad
Quick and Easy Buffalo Salad
- 1-2 LBS Ground Chicken
- 1-3 Red Bell Peppers
- 1-4 Heads Butter Lettuce
- Handful 2 Good Quality Rice Cracker
- Extra Virgin Olive Oil
- Primal Kitchen Buffalo Sauce (or a good quality Buffalo sauce)
- Sea Salt & Cracked Pepper
- Good quality cooking spray. I used an avocado cooking spray for this.
Coat pan with cooking spray.
On medium to high heat, cook ground chicken for a few minutes. Make sure to break the chicken into small pieces.
Add in buffalo sauce.
Let simmer on low-medium heat.
Clean and chop lettuce & red bell peppers.
Place lettuce and bell peppers in a large mixing bowl. Crumble 2 handfuls of a good quality cracker and mix with peppers and lettuce.
Plate and add the ground chicken (make sure it is cooked through). Drizzle a little extra-virgin olive oil and season with sea salt and cracked pepper.
