Quick and Easy Buffalo Salad

  • 1-2 LBS Ground Chicken
  • 1-3 Red Bell Peppers
  • 1-4 Heads Butter Lettuce
  • Handful 2 Good Quality Rice Cracker
  • Extra Virgin Olive Oil
  • Primal Kitchen Buffalo Sauce (or a good quality Buffalo sauce)
  • Sea Salt & Cracked Pepper
  • Good quality cooking spray. I used an avocado cooking spray for this.


  1. Coat pan with cooking spray.

  2. On medium to high heat, cook ground chicken for a few minutes. Make sure to break the chicken into small pieces.

  3. Add in buffalo sauce.

  4. Let simmer on low-medium heat.

  5. Clean and chop lettuce & red bell peppers.

  6. Place lettuce and bell peppers in a large mixing bowl. Crumble 2 handfuls of a good quality cracker and mix with peppers and lettuce.

  7. Plate and add the ground chicken (make sure it is cooked through). Drizzle a little extra-virgin olive oil and season with sea salt and cracked pepper.
