Roasted Asparagus and Tomatoes

I love, love asparagus so much. Here is a quick but a little bit out-of-the-box recipe. Goes great with almost any protein.


Roasted Asparagus and Tomatoes


  • 1-2 Bushells Asparagus
  • 2-3 Large Tomatoes
  • Extra Virgin Olive Oil
  • Avocado Cooking Spray
  • Trader Joe's Chile Lime Seasoning


  1. Preheat oven to 425.

  2. Chop ends of asparagus off.

  3. Chop tomatoes into 4s.

  4. Coat the asparagus & tomatoes with extra-virgin olive oil & the chile lime seasoning.

  5. Line a baking sheet and spray with avocado cooking spray.

  6. Place asparagus in the oven for 12-15 minutes.

  7. Remove then add tomatoes. Bake for another 5-8 minutes.

  8. Oven times may vary.

  9. Remove from oven. Let cool. Can add some nutritional yeast if you like. Gives it a cheesy taste.
