Sweet Potato Chicken Tenders

Sweet Potato Chip Chicken Tenders


  • 1-2 LB Chicken Tenders
  • 1 TBSP Tapioca Flour
  • 1-2 Cups Favorite Good Quality Sweet Potato Chips
  • Extra-Virgin Olive Oil
  • 2-3 Egg
  • Sea salt, cracked pepper, Truvia, and cinnamon


  1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil and spray with coconut oil spray.

  2. In a small mixing bowl mix the sea salt, cracked pepper, cinnamon, and Truvia. Crush the sweet potato chips and place them in another blow.

  3. In another small bowl, whisk together the 2-3 eggs and tapioca flour.

  4. Season chicken generously with sea salt, cracked pepper, Truvia, and cinnamon mix. Then individually dip one chicken tender in the egg mixture until completely coated and then dip in sweet potato mixture. Make sure to evenly press the chicken tender into the chips. Bake for 20-25 minutes or until the chicken is cooked through and juices run clear. The internal temperature of the chicken must come to 165F.

    I can not wait to try these chicken tenders. Instead of the coconut oil I can use Maniatis Olive Oil. It will be awesome for dinner! I’ve made a few of these recipes and they seem super healthy.
