Italian "Breaded" Chicken

Ingredients

  • 1-2 lbs Chicken Tenders
  • 1 Cup Vanilla Oat-milk
  • 2 Large Eggs
  • 1-2 Cups Coconut Flour
  • 1 Tbsp Lemon Juice
  • 2 Packs Truvia - Optional
  • 1 Tbsp Tapioca Flour
  • Italian Seasoning
  • Onion Powder
  • Coconut Oil Spray

Instructions

  1. Pre-heat oven to 400 F

  2. Combine oat milk, lemon juice, and Truvia in a small mixing bowl.

  3. Then mix in Tapioca flour and then a little of the Italian seasoning.

  4. In a large bowl or Ziplock bag place chicken tenders in & pour marinade into bowl or ziplock. Make sure the chicken is evenly coated. Let marinate in the fridge for 20 minutes. Don't exceed 1 hour.

  5. In a bowl mix coconut flour Italian seasoning and onion powder. Mix evenly. Make sure the bowl is large enough for chicken tender to be evenly dipped in.

  6. Spray cooking coconut oil spray on a baking sheet.

  7. Remove chicken from fridge.

  8. Dip tenders in coconut flower batter.

  9. Place on baking sheet.

  10. Cook for 15-25 minutes depending on number of tenders. Internal temperature needs to come to at least 165 F.

  11. Let cool for a couple minutes, plate and enjoy!
