Super Delicious Low-Carb Beef Stew

Ingredients

  • 2.5 LBS Trimmed Beef Chunk Roast, Cubed
  • 1 Bushel /Set Celery
  • 2 32 oz Boxes Bone Broth
  • 2 Small Cans Tomato Paste
  • 1 Package Sliced Mushrooms
  • 5-6 White Pearl Onions
  • 2 Bay Leaves
  • 4-5 Garlic Cloves
  • Heavy Shakes Paprika
  • Heavy Shakes Oregano
  • Heavy Shakes Sea Salt
  • Heavy Shakes Cracked Pepper
  • Shredded Mozzarella (optional)

Instructions

  1. Throw cubed beef chunks into instapot.

  2. Dice celery and throw into instapot.

  3. Chop white pearl onions and throw them into instapot.

  4. Pour 2 32 0z containers of bone broth into instapot.

  5. Add in all other ingredients to the instapot. But do NOT add cheese if using. As for the bay leaves, add those last. I don't bother to chop the garlic but rather throw in a handful of peeled garlic cloves.

  6. Set for 45 minutes on high pressure.

  7. Once fully vented, remove and serve. Add mozzarella cheese if so desired.

  8. Enjoy!
