Throw cubed beef chunks into instapot.
Dice celery and throw into instapot.
Chop white pearl onions and throw them into instapot.
Pour 2 32 0z containers of bone broth into instapot.
Add in all other ingredients to the instapot. But do NOT add cheese if using. As for the bay leaves, add those last. I don't bother to chop the garlic but rather throw in a handful of peeled garlic cloves.
Set for 45 minutes on high pressure.
Once fully vented, remove and serve. Add mozzarella cheese if so desired.
