Gourmet Egg Scramble in No Time

Here is a super-easy way to pack in the anti-oxidants and nutrients into your everyday

Servings 1


  • 2-3 Eggs
  • Trader Joe's Avocado Cooking Spray
  • 1/4 Chopped Onion
  • 1/2 Cup Spinach
  • Garlic & Onion Powder
  • Sea Salt
  • Cracked Pepper


  1. Finley chop about 1/4 red onion.

  2. Coat pan with avocado cooking spray on medium-high heat.

  3. Add onions and saute.

  4. May need to add a little more cooking spray.

  5. Lower heat to a medium-low setting. Add in spinach & then scramble in eggs.

  6. When the eggs are cooked through, season and plate.

  7. For some extra nutrients add some microgreens to garnish.
