Here is a super-easy way to pack in the anti-oxidants and nutrients into your everyday
- 2-3 Eggs
- Trader Joe's Avocado Cooking Spray
- 1/4 Chopped Onion
- 1/2 Cup Spinach
- Garlic & Onion Powder
- Sea Salt
- Cracked Pepper
Finley chop about 1/4 red onion.
Coat pan with avocado cooking spray on medium-high heat.
Add onions and saute.
May need to add a little more cooking spray.
Lower heat to a medium-low setting. Add in spinach & then scramble in eggs.
When the eggs are cooked through, season and plate.
For some extra nutrients add some microgreens to garnish.
