Pinot Noir Salmon & Butternut Squash

The weekend is almost here and we can’t wait to make another great dish with Vinter’s Kitchen seasoning! For this meal, we are going with their Pinot Noir Wine Rub. As you may have guessed, it goes great with Pinot Noir and a large salad.

Pinot Noir Salmon & Butternut Squash

Servings 4 People


  • 1-1.5 LB Salmon Fillets
  • Maniatis Extra-Virgin Olive Oil
  • Vinter's Kitchen Pinot Noir Rub
  • 1 Pack Trader Joe's Butternut Squash Zig Zags
  • 1 Red Onion
  • Avocado Cooking spray
  • Herbal Garnish (Optional)


  1. Pre-heat oven to 425 F.

  2. Coat salmon fillets in Maniatis Extra-Virgin olive oil & Pinot Noir Wine Rub.

  3. Chop onion into large chunks.

  4. Spray baking sheet with Avocado Oil Spray.

  5. Drizzle and evenly cover the butternut squash and onion in Maniatis Extra-Virgin olive oil & season with the Pinot Noir Rub.

  6. Pop the butternut squash and onions in the oven for 15-20 minutes.

  7. Coat pan with the avocado cooking spray and turn heat setting to medium-high.

  8. Place salmon skin side up on pan and cook for about 4 minutes.

  9. Then gently flip salmon over and cook for about 4-5 minutes. The internal temperature of salmon should reach 145 F.

  10. Transfer salmon fillets to the plate. Remove butternut squash and onion from oven and plate with salmon.

  11. Add a little more seasoning if you like. Pair with Pinot Noir, a side salad and enjoy!

  12. Add a herbal garnish if you wish!
