Tomato & Avocado Salad

This tomato and avocado salad is a crowd pleaser and goes great with grilled chicken!

Tomato & Avocado Salad

Ingredients

  • 1-2 Containers Cherry Tomatoes
  • 1 Large Avocado
  • 1/4 Red Onion
  • 1/4 Cup Chopped Cilantro
  • 1 Lime
  • 1/2 Cup Cubed Mozzarella/Goat Cheese Optional
  • 2 TBSP Extra-Virgin Olive Oil

Instructions

  1. Chop cherry tomatoes into halves.

  2. Chop red onion into thin horizontal slices.

  3. Chop the avocado into small cubes.

  4. Mince cilantro.

  5. In a large salad bowl, mix the sliced onion, tomatoes, avocado, cheese (optional), and cilantro.

  6. Drizzle with olive oil, lime juice, sea salt, and cracked pepper.
